Every South African family has braai rules handed down like heirlooms. Here are the twenty that come up most often — the ones that genuinely change the result, not the ones people repeat because their oupa said so.
Fire and coal hacks
- Use the hand test: if you can hold your palm 10 cm above the grid for 2–3 seconds that's high heat, 4–5 seconds is medium, 6–8 seconds is low.
- Build a two-zone fire. Rake two thirds of the coals to one side and keep a cool zone for resting, braaibroodjies and slow items.
- Add a couple of dry hardwood chunks late for smoke flavour without flare-ups.
- Keep a spray bottle of water for flare-ups — never oil the grid over live coals.
- Light with a chimney starter or firelighters, never petrol or paraffin. It taints the meat and it is dangerous.
- Wait for white ash. Cooking over black coals means smoke on the outside and raw in the middle.
- Bank fresh coals on the far edge so they are ready when the first batch fades — do not dump cold charcoal onto a working fire.

Meat hacks
- Take meat out of the fridge 45 minutes before it hits the grid so it cooks evenly.
- Braai boerewors in a coil over medium coals and turn once — high heat splits the casing and you lose the fat you paid for.
- Salt steak generously 40 minutes before, or immediately before braaiing — never in between, when the surface is wet.
- Score the fat on lamb chops so it renders instead of curling.
- Pat meat dry before it goes on. A dry surface browns; a wet one steams.
- Rest every cut for 5–10 minutes under loose foil. This is the single easiest upgrade to your braai.
- Use a meat thermometer for chicken and thick steak — 74 °C for chicken, 52–55 °C for medium-rare beef.
Sides and clean-up hacks
- Butter the outside of braaibroodjies, not the inside, and press them in a hinged grid over the cool zone.
- Wrap potatoes in foil with butter and rosemary and bury them in the coals at the start of the braai.
- Use a smoker tube for cheese, nuts or snoek if you want smoke without owning a smoker.
- Keep a foil drip tray under fatty cuts to stop flare-ups and cut cleaning time in half.
- Make chakalaka and potato salad the day before — both improve overnight.
- Run an electric grid brush over the grid while it is still warm after eating — 60 seconds then beats 20 minutes tomorrow.
